Here is my estimation for a replacement to Dry Italian Seasoning
According to the package there is 19g of spices, I’m estimating a break down like this:
Sugar 8 g or 2 tsp
Salt 2.5g or 1/2 tsp
Garlic Powder – 5g or 2 tsp
Onion Powder – 5g or 2 tsp
Splash of Vinegar – 1 tsp
I added extra garlic and onion powders to compensate for the lack of the below ingredients. The original recipe likely is closer to 1 tsp garlic powder, 1 tsp onion powder.

Xanthan Gum
Maltodextrin
Parsley
Guar Gum
Soy Sauce
